When we think of duck rice, the braised and roasted versions are usually the ones that come to mind. Well, ever heard of stewed duck? If you haven’t, then you definitely have to head down to Soh Food at Empress Road Market and Food Centre! Known to be the only stall in Singapore serving this dish, it is definitely a unique dish you have to try! Ready to explore this hidden gem? Let’s go!

Stewed Duck At Farrer Road

Soh Food is currently run by Mr William Soh, who opened his stall three and a half years ago after leaving the air force. As he was deciding on what to serve at his hawker stall, he chose stewed duck as he used to eat it only on special occasions. Looks like his beloved dish is now available all year round for everyone to enjoy! As the recipe is his mother’s, the dish is incredibly meaningful to Mr Soh.

What’s unique about the stewed duck is that no herbs are used, unlike braised and roasted duck. Preparation starts as early as 5am daily, with the duck taking two hours to stew. The result is wonderfully tender duck meat that you simply won’t be able to get enough of! Additionally with the meat being really tender, it is a very suitable dish for the older folks!

The Duck Leg ($6.20) comes with a gigantic portion of drumstick and thigh, mushrooms, and greens, guaranteed to give you one satisfying meal! For those who love their crabs, feel free to add on a bowl of rice ($0.50) or kway teow ($0.70) to complete your meal. The duck is extremely tender and easily falls off the bone! You won’t even need any effort to tear off the meat! The skin is simply divine, melting in your mouth as soon as you take a bite! Additionally, there is a very homely feel to the dish, giving you a sense of nostalgia with each bite.

Flavourwise, there is a slight gaminess to it, but the belacan chilli and gravy easily helps to mask it. There is a pleasant mushroom flavour to the gravy, making it pretty reminiscent of pen cai, a popular Chinese dish usually eaten during CNY. The belacan is a must-try for all you spice lovers! It seriously packs a punch, delivering bursts of umami and acidity that complements the duck beautifully! Though a simple dish, Mr Soh has certainly executed it to utter perfection! Definitely a must-try!
