If you’re a sceptic yourself, give Ru Yi Yuan Vegetarian a shot—it is likely to prove those notions wrong. Formerly located at Tanglin Halt Coffee Shop for over 30 years, the stall has now relocated to the newly opened Margaret Drive Hawker Centre.

If their decades of history wasn’t testament enough, Ru Yi Yuan’s Vegetarian Bee Hoon ($3.50) was voted as one of the best in Singapore in a survey by local radio station UFM100.3. Along with each plate of these savoury and peppery noodles, you’ll get to choose from an assortment of fried ingredients such as beancurd skin, mock meats, and mixed vegetables. Accompany all these with pickled green chillies and a spicy sambal sauce.

For a tasty snack, go for Ru Yi Yuan Vegetarian’s crowd-favourite Soy Crispy ($3), otherwise known as Zai Er or mock goose. This crispy treat is made of deep-fried rolled beancurd skin, seasoned with five-spice powder.

You can also opt for their Mock Chicken Drumsticks ($2 for three pieces). These drumsticks are said to be crisp on the outside, with a light soya sauce glaze that gives it an umami kick. It is said to closely resemble the taste of real chicken. However, do take note that this dish is only available at their Redhill branch.

Ru Yi Yuan’s Meatless Dumplings ($1 for three pieces) are also worth a shot. These dumplings are stuffed with preserved vegetables and chives, and are said to come close, flavour wise, to a pork and chive dumpling.

Ru Yi Yuan Vegetarian’s Popiah Roll ($1) is another popular pick. It’s said to sport a thin and flaky skin, stuffed with juicy vegetables.
