Poached rice, or commonly known as pao fan, has recently garnered a lot of Internet buzz. Looking at photographs, one may easily be confused between porridge / congee with pao fan. Unlike porridge / congee, poached rice is made with cooked rice, and then it is simmered with stock. As a result, poached rice is more flavourful, and has a crispier texture in comparison. Hungry for some?

Located in multiple locations including The Paragon, Le Shrimp is famous for hand-pulled noodles. It is the first restaurant in Singapore to introduce shrimp broth and to serve shrimp broth up to date. How is the shrimp broth is made? Using fresh big prawns, it is baked at 180 degrees for 45 minutes. Then, it is hand-grinded to a fine texture, before it is simmered for eight hours with premium conpoy for an umami note.
