More below:

Handmade Combination of Prawn Balls and Traditional Pork Roll ($20 for 6 pcs each, U.P $38.60)
Begin your gustation with two kinds of handmade appetisers – Prawn Balls and Traditional Pork Rolls sliced into 6 pieces each.

The Prawn Balls are beaten vigorously by hands, so that you get that smooth and crunchy texture, and packed with the seafood flavour. After deep-fried till crisp, take a bite and appreciate that succulence and bounce.

You get the best of both worlds with the more savoury side of Pork Roll with a light crunchy batter, accompanied with that unmissable sweet sauce.

Teochew Style Braised Duo Combination Platter (Sliced Irish Fat Duck and Sliced Pork Belly) ($20 for reg, U.P $28)
Tease your palate with another two-in-one dish, a combi platter of duck and pork.

Prepared in true Teochew fashion, Irish fat duck and pork belly are braised to perfection and sliced in serving pieces over silky braised tofu. I thought that the seasoning was not too strong on this dish, much lighter than the average Chinese restaurant.

Paradise Teochew takes pride as the first Teochew restaurant in Singapore to use Irish Fat Duck. Recognised as the Wagyu of ducks, they are imported from Ireland, and its good amount of fat makes this dish extra succulent and juicy.

Teochew Style Stewed Duck with Yam in Casserole ($20 for half – pictured above is full portion, U.P $38)
A chef recommended dish oozing with tenderness. A whole duck is stewed Teochew-style for over 3 hours ‘til its meat is soft enough to slide off the bones.

Partner that ultra-satisfying texture with a rich and strong duck flavour. This casserole with a dark sauce comes with blocks of yam for an added creamy texture.

Teochew Style Chilled Steamed Mullet ($20 for 700 – 800g, U.P $40.60)
As freshness is the hallmark of Teochew cuisine, don’t deny your palate the delicate taste of chilled steamed mullet.

A whole fish is steamed fresh and chilled to capture the mullet’s firm, juicy flesh and rich, nutty taste. Atypical from the usual when the fish is served steaming hot, this is when you can appreciate the sweetness of the flesh better.

Served in the quintessential Teochew sauce made from fermented beans and aromatics – you just need a slight dip.

Steamed Diced Chicken with Chestnut wrapped in Egg White Crêpe ($20, U.P $26)
Another chef recommended item, this poultry dish makes use of steamed diced chicken mixed with water chestnuts.

When I heard how this dish was prepared, I got overwhelmed. How much patience and skills are needed?

First, the white skin wrapping is not made from flour, but an egg white crepe which would require much skill for it to be thin yet strong enough to wrap the ingredients so that it remains unbroken.

Then, this skin is used to wrap up a mixture of chopped chicken bits, Chinese ham, diced water chestnut and bamboo shoots.

The juicy crunch of the chestnuts shine through at each bite, as the crepe gently breaks to reveal the ingredients.

Wok-fried ‘Hor Fun’ with Kai Lan and Preserved Turnip ($20 for medium, U.P $33)
Add this noodle dish to your spread, soft, flat rice noodles (hor fun) made lightly crisp by wok-frying them with a leafy Chinese broccoli (kailan) and preserved turnips (chai poh).

The cooking process adds that important wok hei, and a punch of umami flavours.

Moving on to the Dim Sum items, you can get all 20 Dim Sum at $3.80 each – indeed value for its money.

These include Steamed Dumpling with Preserved Olive Vegetable (U.P $6.80), Steamed BBQ Honey Pork Bun (U.P $7.80), Steamed Glutinous Rice with Chicken wrapped in Lotus Leaf (U.P $6.20), Steamed Pork Dumpling ‘Siew Mai’ (U.P $7.80), Steamed Spare Rib with Black Bean and Diced Yam (U.P $6.20), Steamed Xiao Long Bao (U.P $5.80), Baked BBQ Honey Pork Pastry (U.P $7.80), Steamed Rice Roll with Dough Fritter (U.P $6), Deep-fried Prawn Dumpling with Salad Sauce (U.P $7.20), Mini Egg Tart (U.P $6.80) and many more.

Steamed Molten Salted Egg Yolk Bun ($3.80, U.P $6.80)
The gem of this dim sum is actually liquid gold, as molten salted egg yolk is encapsulated in a soft, white steamed bun.

An order gives you three buns, all bursting with sweet-savoury flavours as you bite into them, releasing that beautiful molten bright yellow cream.

Steamed Rice Roll with Sesame Sauce ($3.80, U.P $6.00)
Savour the blend of sweet and savoury sesame sauce and creamy peanut butter.

The smooth rice noodles cheong fun rolls are drizzled over with two sauces, and topped with fragrant bits of sesame seeds.

Its soft texture and delicate flavour makes this a light dim sum for gentle appetites.

Pan-fried Radish Cake ($3.80, U.P $6.20)
This savoury crisp-edged block of cake is made with grated radish bound together in a rice flour-based batter, steamed then pan-fried.

The two-step process gives it a mildly crunchy exterior while inside the radish is soft and slightly chewy.

Steamed Glutinous Rice Roll in Teochew Style ($3.80, U.P $6.20)
A labor of true love, this dim sum requires time and effort to prepare. Aside from perfecting the fluffy texture of the outer layer, another key ingredient peanuts – requires special attention as it has been handpicked from the team.

The peanut needs to be fragrant, of an adequate size, and with its skin intact.

What you get is soft airy skin, packed with slight-sticky glutinous rice within. Something you may have not tried before.
