So what is “Pao Fan” (Poached Rice)?

The Teochew style dish is not quite like porridge even though it looks similar. The rice is first steamed or boiled, then simmered in broth. After which, crispy rice bits are often added just being serving for diners to experience the various textures of the rice grains.

Over at Le Shrimp Ramen, the poached rice is simmered briefly in the specialty shrimp broth. Prepared using big, fresh prawns, pork bones and Chinese spices, you can see in its tangerine-orange-ness how intensely flavourful the broth is.

As to how the broth is prepared, fresh big prawns are baked at 180°C for 45 minutes, hand-grinded to a fine texture, then cooked for more than eight hours with premium conpoy to get the umami flavours out.

Here’s what you can expect from Le Shrimp Poached Rice Craze:

Signature Trio Poached Rice ($17.90, U.P.$19.90)
For the all-in-one bowl, go for the Le Signature Trio Poached Rice, a piping hot bowl of shrimp extravaganza featuring the intensely prawn-flavoured broth.

This is called “trio” as it is topped with three mains ingredients of big fresh prawns, handmade ebiko prawn paste and prawn dumplings.

My favourite part is the ebiko prawn paste shaped out of prawn meat, and texturally the ebiko lends a juicy crunch.

Customers would be given a small saucer of crispy rice grains to pour over upon serving, so that you can experience twin textures of slightly crunchiness and fluffy steamed rice soaked in rich broth.

Big Prawn & Braised Pork Rib Poached Rice ($16.90, U.P.$18.90)
Fresh ang kar prawns are used for both the broth and poached rice, as the wild sea prawns are known for their bouncy and meaty texture with sweet taste.

This is contrasted with pork ribs which are braised over long hours. You can tell the texture by picking up with your chopsticks – soft and tender, and satisfyingly melt-in-your-mouth.

Ebiko Prawn Paste Poached Rice ($14.50, U.P.$15.50)
If you prefer a ‘plainer’ bowl, go for the Ebiko Prawn Paste Poached Rice, with irregular hand-made balls shaped out of prawn meat, and texturally the ebiko lends a juicy crunch.

Prawn Dumpling Poached Rice ($13.50, U.P.$14.50)
Delicious parcels of succulent prawn dumplings with smooth skin, though for some these dumplings would pair better with noodles than rice.
