La Porpo for legit ayam goreng and sambal in Newton

You know a stall is legit when MasterChef Singapore judge and chef Bjorn Shen says it serves his “favourite ayam goreng in Singapore”. The said stall is none other than La Porpo, opened by a third-generation husband and wife duo.

Originally in the Jalan Besar neighbourhood, La Porpo is now located in Newton Food Centre, which is also home to other delicious eats including OG Lemak‘s famous twice-steamed nasi lemak.

A popular dish is the Kelantan-style Nasi Kerabu (from $8): fragrant rice with a slab of fried chicken, topped with crispy crumbs for good measure. Each piece of chicken is seasoned in a batter mix comprising simple ingredients sch as turmeric, cornstarch, salt, and pepper. Then, it’s deep-fried for around five minutes or until golden, before it’s left to drain and rest. The set also comes with a piquant house-made sambal.

If you’re wondering, the fried chicken batter recipe was handed down over the generations. After much testing and trialling, La Porpo’s version was born.

There’s also the much-beloved Nasi Sambal Penyet (from $7) AKA ayam penyet, which comes with a different type of sambal that’s made with red chilli padi for extra heat. You can opt for fish instead of chicken with a small top-up.

Those who love spicy can get the Nasi Sambal Geprek (from $7). This hearty dish stars crispy fried chicken doused and smashed with a fiery sambal consisting of crushed green and red chillies, garlic, ginger and a few other secret ingredients.
