Ichiban Sushi has rolled out a revamped menu for 2021 in all their outlets. You will be spoilt for choice as they have added a whopping number of 28 new items, including a variety of sushi, a la carte, mains, and a brand-new cheese range.

Cheese, glorious cheese.

If you are those who love that gooey, melty and creamy feeling in your food, then your wildest cheese dream may just come true.

The new chiizu Ichiban Sushi dishes to look out for include the Salmon Cheese Tanuki Roll ($14.90), Cheese Buta Kimchi Don ($12.90), Unagi Cheese Chirashi Don ($15.90), Cheesy Tori Karaage ($8.50) as well as Cheese Mentai Buta Udon ($12.90).

Other new (non-cheese) items include Black Pepper Gyoza ($6.90), Pirikara Beef Salad ($11.90), Spicy Unagi Roll ($14.90), Aburi Beef Roll ($14.90), Spicy Salmon Gunkan Sushi ($2.90), Beef Steak Mentai Don ($16.90), Aburi Mentai Kaisen Don ($16.90), Lobster Salmon Don ($17.90), and Spicy Bara Chirashi Don ($16.90).

Cheese Mentai Buta Udon ($12.90)
Kick off the cheese party with this hearty bowl of Japanese udon served alongside melty mozzarella cheese and creamy spicy cod roe mayo.

You may wonder where the udon is. It is actually hidden beneath the bed of cheese and creamy mentaiko sauce. It is not that common to find a ‘dry’ udon version around in Singapore, as compared to the typical soupy styles. So some diners may just like the novelty.

Made using an original recipe, the udon had a thick chewy texture. The chewiness and creaminess were balanced out with the crunch of tempura flakes, while warm soba sauce imparted savoury flavours.

Adding heft to the dish were thin slices of pork, mostly lean but with a little fat for flavour.

Salmon Cheese Tanuki Roll ($14.90)
Made extra special with cheese, this sushi roll enwraps egg strips and batonettes of cucumber with sweet miso mayo.

Each slice is topped with a thick slice of seared salmon, crisp tempura flakes, a dollop of flying fish roe and fine strips of nori.

Together, they form a tapestry of shapes, tastes, and textures – delicious in each bite.

Cheesy Gyoza ($7.90)
You know gyozas have made it big when they are cheesified for a cheese pull. There was a bit of surprise when it was served on a hot plate still bubbling.

A hot plateful of Japanese pan-fried dumplings mingles with shredded cheese for that ultimate meltdown. Lift a piece of gyoza at the precise time and temperature and you capture an IG-worthy stretch.

Hotate Mentai Yaki ($10.90)
Delight your taste buds over these large, sweet meat Japanese scallops with a delicate texture.

Topped with spicy-briny cod roe mayo and grated mozarella cheese, each hotate turned slightly bouncy when baked.

And as the cheese melts, you get a sublime fusion of savoury and spicy flavours.

Should you prefer to steer away from the cheesiness, you can discover some equally appetising non-cheese dishes.

This fun and casual concept is more than just a sushi place. A la carte and set menus carry extensive ranges of sushi, sashimi, appetisers, salads, hot pot, Japanese curries, donburi, noodles, teishoku, and hot/cold drinks. People come here for variety, and value-for-money Japanese meals.

Sushi alone includes all sorts of nigiri, gunkan, makimono, temaki, rolls, and delicacies. Here are the other non-cheesy new Ichiban Sushi items:

Yuzu Orange Tori Karaage ($8.50)
Try their rendition of deep-fried boneless chicken, coated with a bright and citrusy yuzu orange infused sauce.

Served with a sprinkle of toasted sesame seeds, fresh spring onions, and zesty strips of yuzu rind. I would recommend eating this soon after it arrives at the table, as the chicken would lose some of the crispiness after absorbing the sauce.

Spicy Miso Age Tofu ($6.50)
Order this new appetiser specially presented in a hot stone bowl sizzling with steam, and also to keep it warm.

Four large tofu cubes are deep-fried with a slight crisp skin. Served topped with toasted almond slivers for a contrasting crunch, and fresh chopped spring onions for a crunchier finish.

Let them in the bowl a while, and the spicy miso sauce would seep into the outer layer.

Mentai Tamago Unagi Don ($16.90)
Here’s one recommended rice bowl for eel lovers. Relish this satisfying mix of grilled freshwater eel, fresh cucumber, spicy cod roe mayo, and flying fish roe served atop sushi rice. Accompanied with a side of miso soup.

The unagi’s bold caramelised flavour and smoky aroma enhance the grilled fish’s superb fatty taste.

The other interesting component was the tamago or sliced Japanese sweet omelette further topped with torched mentaiko sauce arranged in a circle around.

Salmon Yukke Don ($13.90)
When people say “don’t leaf out your greens”. This donburi is a healthier version than usual, with a bed of fresh crunchy lettuce laden with chunks of salmon sashimi tossed in sauce, topped with poached egg.

The melt-in-your-mouth pieces of fish were tossed along with crisp cucumbers, and fine strips of nori.

Warning: there is some chilli padi in the mix so can be a tad spicy.

Mango Ebi Roll ($13.90)
This seafood roll gets a fruity upgrade with the addition of fresh, ripe chunks of mangoes. Rolled inside are strips of soft egg omelette and crunchy cucumbers.

Each slice comes topped with prawn, flying fish roe, spring onions and salted kelp. Served with mango mayo for a creamy, tropical flavour.

Cool this all down with a cup of hot or iced Yuzu Tea.
