Ultra fluffy, pillow-soft, melt-in-your-mouth… If you love your pancakes, get ready as well-loved Japanese pancake cafe FLIPPER’S will open at Bugis Junction on 25 October 2021 (Mon).

This is its 2nd outlet in Singapore, with the first flagship store at Takashimaya Shopping Centre – which is now Halal-certified.

Originated in Tokyo in 2014, the stores have become a must-have for dessert lovers in Japan for its Kiseki soufflé style pancakes (or ‘miracle’ pancakes) known for its beautiful golden-yellow top and bottom matched with wobbly-soft texture.

While I have not tried it at Japan before, I had FLIPPER’S at Hong Kong and the Takashimaya outlets and loved that the pancakes were both light and not too sweet.

There are a few ‘secrets’ to its recipe – the eggs, flour, milk, and preparation methods.

Only Hinata eggs from Kanagawa prefecture are used, in which the eggs are laid by hens “raised under pristine conditions by the Tanzawa mountain range and clear Sagami River”. Wah.

These eggs would give that delicate ‘egginess’ and airy consistency.

Japanese Kitahonami flour milled from Hokkaido wheat, rich Japanese fresh milk, and AOP-certified French butter are also used in the making to bring out the natural flavours.

The Bugis outlet has a glasshouse-liked decor which allows natural-daylight to shine in during daytime.

On the side is the show kitchen in which customers can watch their pancakes being made on the spot behind the window.

Note that as the soufflé pancakes are cooked to order at precise temperatures, the estimated waiting time is about 20 to 30 minutes.

With both sweet and savoury delights on the menu, here are the recommended items from FLIPPER’S Singapore at Bugis Junction:

Millennial Pancake Strawberry Daifuku ($24.80)
This is a seasonal limited edition “Millennial Pancake”, named after its dreamy pink colour.

This features soufflé pancakes with sweet Chitose strawberries, house-made strawberry jelly and French cream cheese layered in between.

Then the pancakes are blanketed with a smooth handcrafted pink-coloured strawberries blended cream.

One of my favourite elements was the Daifuku Strawberry, with soft and chewy mochi stuffed with fresh juicy strawberry that completes the eye-catching dessert.

Kiseki Pancake Honeycomb and Nut Butter ($17.80)
New on the FLIPPER’S Singapore menu is the Kiseki Pancake included with a side serving of honeycomb and nut butter.

The addition is a side serving of butter made of caramelised walnut, French butter and organic honey.

When you spread this butter across, you get that trace of crunch which contrasts with the softness of the pancakes.

Kiseki Pancake Matcha and Azuki Bean Paste ($19.80)
My personal favourite pairs the popular flavour combination of Japanese matcha and azuki red beans. Because why not?

Instead of ice cream, the pancakes are topped with matcha cream made with quality matcha powder from Kyoto, and fresh whipped cream.

The ball-shaped azuki red bean paste adds that delightful earthy taste and sweetness.

Kiseki Pancake Caramelised Banana with Chocolate Ice Cream ($21.80)
Another classic pairing, this time chocolate and bananas – which cannot really go wrong.

This showcases soufflé pancakes paired with Häagen-Dazs Belgian Chocolate ice cream (sprinkled with chocolate fudge flecks within) and caramelised bananas.

For a richer and indulgent finish, drizzle some of that melted chocolate over made with Valhona French chocolate.

Kiseki Pancake Fresh Fruits with Honeycomb and Nut Butter ($21.80)
For a more refreshing treat, pick this combination with trio of fresh Chitose strawberries, blueberries and bananas with the soufflé pancakes.

This is accompanied with Canadian maple syrup, and honeycomb and nut butter on the side.

Kiseki Pancake Maple Bacon and Fried Egg ($22.80)
Moving on to the three choices of savouries. You can also top up $6 to complete the meal with a soup of the day and a choice of drink (latte, honey lemon tea, citron tea or Americano).

This savoury breakfast plate was very satisfyingly delicious due to the inclusion of fried Toretama egg – a type of premium egg from Oita, Japan, produced by free range farming.

You would find the colour of the yolk more orangey, and much creamier and richer in taste.

I also like the turkey bacon which was surprisingly soft, and the crispy house-made rosti. Served with sides of salad with sesame yuzu dressing and maple syrup.

Kiseki Pancake Eggs Benedict ($22.80)
The Eggs Benedict dish features poached Hinata eggs from Kanagawa prefecture atop two soufflé pancakes. The eggs are covered in creamy Hollandaise sauce with a sprinkle of paprika powder.

One side includes grilled tiger prawns and avocado cubes; while the other has Norwegian smoked salmon and sautéed spinach.

To complete the plate is salad with bright sesame yuzu dressing.

Kiseki Pancake Avocado Salmon ($22.80)
Brunch gets better with this savoury pancake dish with smoked salmon, creamy avocado slices, house-made rosti, salad with sesame yuzu dressing and honey yogurt sauce on the side.

Complete your meal with house-specialty drinks of Soda or Travel Floats ($7.80 for soda, $1 extra for floats) in flavours of Passionfruit, Red Fruits, and Summer citron.

If not, have a specialty coffee prepared using PPP Coffee’s Throwback Blend with dark chocolate, caramel and hazelnut notes.
