Ex-Crystal Jade chef, Chef Kin, recently ventured into the hawker scene by opening his first hawker stall named Chef Kin HK Wanton Noodle, in Yishun. Garnering immense fanfare for his affordable Hong Kong-style wonton noodles, he is expanding his business to open an additional outlet in Bedok on 26 November, and another in Ang Mo Kio on 14 December this year.

Go straight for the HK Wonton Noodle ($5), which features noodles made from duck eggs, and plump wontons filled with pork and prawns, all swimming in a hot umami-packed broth. Boiled with pork, ham, flounder fish, and old hen, the soup is addictively savoury and flavourful.

Alternatively, there is also the HK Dumpling Noodle ($5), which comes with extra ingredients such as black fungus and bamboo shoots, giving the dumplings a uniquely crunchy texture. These are slightly larger compared to the wontons, so you can go for these if you’re looking for a more substantial meal. 

HK braised beef brisket noodle

If you’re a fan of saucy noodles, try the HK Braised Beef Brisket Noodles ($5.50), which sees noodles doused in a sweet-savoury oyster sauce and soy sauce gravy, topped with tender chunks of beef brisket. The beef brisket is stewed for two hours, locking in a strong braised flavour within each piece of meat.

For a side to share, opt for the Fried Wontons ($4), which complement the noodles well, with its extra crispy texture. These come in a plate of five, alongside a dollop of mayonnaise for a touch of acidity.

For more new openings, check out 5-Star Dim Sum that opened its second outlet in Food Junction at Rivervale Mall with over 30 dim sum dishes. If not, there is also Xin Mei Xiang Lor Mee that opened its third branch in Holland Village, with their 48-year-old lor mee recipe!
