The Egg Tarts from Joy Luck Teahouse are from Hoover Cake Shop 豪華餅店 in Hong Kong with two choices – one with a multi-layered puff pastry crust, the other “cookie” base akin to sweet shortbread crust.

The crust base is made from carefully chosen ingredients, a special blend of fine butter, and the best premium flour.

For an added touch of luxury, the egg tarts are also available flecked with 22-carat edible French gold flakes, which lends a touch of sophistication.

In terms of quality assurance and authenticity, the Chee Cheong Fun or jyu cheung fan are developed together with the same supplier which supplies to the Top 10 Chee Cheong Fun stores in Hong Kong.

For the Original HK Cheong Fun, the smooth rice noodles sheets is served the traditional street-snack style – rolled up without fillings, and drizzled with signature soya sauce, sesame peanut sauce, and sweet sauce.

However, you can also choose to ‘upgrade’ with the addition of hae bee hiam (spicy shrimp paste) – specially developed by local actor Ah Ge Li Nanxing. (Note: Chee Chong Fun not available at ION Orchard and Funan outlets.)

The brand YUN NANS specialises in Yunnan ethnic highland cuisines (高原料理 gao yuan liao li). This type of cooking sources and uses fresh mountain ingredients from the Yunnan Province of China, where you can discover regional cooking nuances in China.

Their signature dish – the Steam Pot Chicken Soup, is prepared without even adding a drop of water. So apparently that’s how uniquely brewed this steam pot is, using a pressure-steaming technique for three hours on a special breed of black-feet chicken. The water found in the soup comes from the condensation of the steam alone.

Prepared in a special hand-made Jianshui claypot, this dish rewards you with a clear, delicate soup with a robust and nourishing flavour.

Also recommended is the Stir-Fried Dragon Chives with Yunnan Beancurd Skin 云南豆皮炒青龙菜, featuring beancurd skin which is specially imported from Yunnan.

Taste how this delicate soybean product is made with well water from Shiping County at Yunnan’s Honghe Prefecture. With no additives, the beancurd skin is as natural as it can be.

Yang Guo Fu 杨国福麻辣烫 is the world’s largest Mala Tang chain with over 6000 outlets. Mala Tang is a hot and spicy Sichuan soupy dish of meat and vegetables, commonly eaten as a street food in Northern parts of China, though its popularity has quickly spread throughout the country.

The dish is categorised by being both ”ma” (numbing) and ”la” (spicy), flavoured with a combination of Sichuan pepper, dried chilli pepper, and other aromatics.

Get the Spicy Mala Beef Broth, with the Mala Beef Broth made from brewing premium beef bones, oxtails with various herbs and spices over low heat for 8 hours to make it flavourful and aromatic.

I found its ”wei la” (mild spicy) indeed on the mild side, a notch lower in fieriness when compared to say a Mala Xiang Guo equivalent.
