Accommodating up to more than 15 groups of diners, Apricus Cafe is definitely larger than some of your other cafes in Singapore. The space is decorated with hanging plants and stylish design features similar to that of The Populus. On top of that. there’s even a skylight roof for natural sunlight to illuminate the place.

Apricus offers a plethora of items, ranging from all-day brunch mains and sides to desserts and coffee. For all-day brunch, indulge in dishes like The Populus Scramble ($20) which is brought over from Populus Cafe, Spring Pancake & Fried Chicken ($22), and Tuscan Lamb Harissa Baked Egg ($22). For sides, enjoy their Tempura Shimeiji Mushrooms ($13) and their Sticky Date Pudding ($13) and Apricus French Toast ($22) for dessert.
Hummus & Foccacia ($13)

Starting off with a tasty appetiser, the homemade hummus is served with crispy chickpeas, spiced oil, pomegranate, and toasted foccacia bread. Crispy and fluffy, the foccacia pairs perfectly with the creamy hummus. Unlike your usual hummus which is typically one-dimensional, Apricus Cafe’s hummus has a slight tang which blends well with the flavour of the chickpeas, making it really unique and refreshing.

Adding a delightful textural crunch are the crispy chickpeas and pomegranates while giving a touch of sweetness as well. Each bite is an incredible blend of flavours and textures, making this dish a must-try!
Norwegian Salmon Brown Butter Linguine ($23)

For pasta lovers, this dish is a must-try. Served with salmon fillet, fennel & granny smith apple slaw, beurre noisette (brown butter sauce), shio kombu dust, and linguine, it’s best to share this as it is on the oily side due to the brown butter. The pasta has the perfect al dente texture and each strand is beautifully coated with the brown butter sauce. Each bite is filled with buttery goodness, with a slight tanginess from the slaw for balance.

The salmon is nicely cooked, giving the skin a pleasant crispiness while the meat is delightfully flaky. As salmon is naturally fatty, the combination of its fattiness and the brown butter sauce does make it feel heavy after a while. Overall, it is definitely still a tasty dish, but it might not appeal to those health-conscious individuals.
Dark Chocolate Sundae With Waffle ($20)

Of course, no meal is complete without some dessert. Do note the Dark Chocolate Sundae is served at $15, with an additional $5 for the waffle. This sweet treat is served with decadent dark chocolate ice cream, passionfruit curd, raspberry coulis, and hazelnut and chocolate crumbs. The waffle is crispy and fluffy, which has a slight savouriness that pairs perfectly with the ice cream. There is even an additional waffle base to hold the ice cream which gives a touch of crispiness.

The dark chocolate ice cream is really creamy and has a pleasant bitterness to it. Adding a delightful tartness is the passionfruit curd and raspberry coulis, giving a beautiful balance of flavours. As for the hazelnut and chocolate crumbs, they give a nice contrast of crunchiness that blends well with the other textures. Additionally, mini chocolate sponge cakes are served, adding a nice chocolatey flavour while being soft and moist.
