It looks like our hunt for tasty Hokkien Mee has brought us to ABC Brickworks Food Centre this time. Introducing the popular Tiong Bahru Yi Sheng Fried Hokkien Mee, a Michelin Bib Gourmand stall that has been drawing crowds for its amazing Hokkien Mee for over 40 years!

Run by second-generation owners, the now 73-year-old Mr Toh who is the head chef took over from his dad, previously selling hokkien mee out of a pushcart along Tiong Bahru. Even after four decades, the stall remains a popular go-to spot for many, drawing snaking queues of even up to two hours! Serving up only one dish, their famed hokkien mee starts at $5 and goes up to $6 if you’re dining in and $6 and $8 for takeaway.

Served with minimal ingredients, the Hokkien Mee ($5) comes with squid, egg, and three pieces of de-shelled prawns. The noodles are perfectly cooked and are in between the wet and dry versions. According to most reviews, the hokkien mee here is supposed to be on the wet side due to the constant scooping of the broth that is added to the wok when cooking each order. As we were one of the first few customers when it opened, this could have resulted in the noodles being slightly drier than usual.

Flavourwise, it is definitely on the lighter side which would probably appeal to health-conscious individuals and older folks. Adding in more of the stock would certainly help, but then again that could be due to the lack of broth in the wok with us arriving early. Giving a pleasant amount of smokiness is the wok hei, as well as the acidity from the lime to help tie the flavours together.

It is highly recommended to pair the chilli with the noodles as it not only packs a punch but it also adds an additional layer of umami that makes the dish a lot more flavourful. A sprinkle of crispy pork lard would have elevated the flavours but its absence could be due to the dish being on the healthier side. As for the ingredients, the prawns and squid are fresh and have a really good bite to them.

Although Tiong Bahru Yi Sheng’s hokkien mee might not be the best, it is still pretty tasty overall and there’s certainly a comforting and homely taste to it that makes them stand out. As for the flavour and consistency of the noodles, we can’t say for sure whether arriving later would improve it but feel free to give it a go. Hurry down and try it for yourself today!
