Chai Chuan Tou At Bukit Merah Hawker Centre
Chai Chuan Tou Yang Rou Tang was previously situated at the former Supreme Court, before settling at Bukit Merah Hawker Centre. The owner Mdm Koh, has more than 33 years of experience selling mutton soup and learned the trade from another hawker. She perfected the recipe by watching and experimenting until she achieved the right combination of herbs and spices to make the heavenly soup.
Making this glorious dish is no easy task. The fresh mutton is prepared early in the morning everyday, with the meat having to boil for around two and a half to three hours to become tender. All that hard work and effort results in a scrumptious dish that patrons can’t get enough of.
Chai Chuan Tou’s Michelin Bib Gourmand Mutton Soup
Chai Chuan Tou’s mutton soup is more towards the Teochew-style, which is slightly peppery and herbal. With a price range of $5 to $8, customers can choose an array of mutton parts for their soup. Customers can choose parts like tender ribs, meatballs, tripe, and tendon. Additionally, for those who are feeling adventurous, you can try out the lamb brains.
The mutton soup is rich, slightly sweet, with a herbal taste that’s not too overpowering. Additionally, there’s a taste of fresh garlic that’s not too strong as well. Take a sip of the soup, the herbal taste will first hit you, followed by the subtle taste of the mutton at the end. An explosion of flavour is guaranteed in every sip, so make sure you savour every drop of the soup!
Irresistible & Delectable Mutton Meat
The meat is flavourful, soft, and simply fall-off-the-bone tender. Additionally the gaminess of the mutton isn’t too strong, making it very palatable. In fact, it has a touch of sweetness and its flavour is infused into the soup. For those that order the Mixed Mutton Soup, do note that the texture of the various parts will be more chewy. However, they are still well cooked and aren’t rubbery at all.
For those who love their bone marrow, a straw is also given to suck through the mutton marrow. Do be sure to dip your mutton into the delectable chilli sauce! The chilli is thick and tangy and perfectly cuts through the gaminess of the mutton.
