Lai Heng Teochew Kueh 莱兴手工潮州粿 at Yuhua Place Market & Hawker Centre is one of the new entrants to the Michelin Bib Gourmand Singapore 2021 list, making it the first Teochew Kueh stall to be given the honours.
There are a couple of semi-long queued stalls at Yuhua Place Market & Hawker Centre, such as Hua Xing Bak Kut Teh, Xing Yun Hainanese Boneless Chicken Rice, Poon Kee Wanton Noodle, Li Fang Zhou Pin and Jing Jing Carrot Cake, but Lai Heng appears to be one of the most popular.
Opened from 6:30am in the mornings (except Mondays when they are closed), you can see the hawkers hand-making the Teochew Kuehs within the small stall in neat clockwork.
There are four types of Kuehs being sold, from Soon Kueh (turnip and bamboo shoots), Ku Chai Kueh (chives), Chye Kueh (cabbage) and Peng Kueh (glutinous rice).
Each cost $0.90 to $1.20, and come in steamed or pan-fried versions. You can add the chilli which was not too spicy, and sweet dark sauce.
I don’t often find the cabbage-filled Chye Kueh at other stalls, and thought that it had an interesting bitter-sweet fillings.
The skin was my favourite part – soft, chewy (yet not sticky) and translucent-like sheen.
The pan-frying gave it that extra crisp on the outer layer, best eaten warm and fresh there.
The Ku Chai Kueh (chives) happened to be my favourite, with fragrant fillings that would likely bring upon that feeling of nostalgia.
Also, I liked the size of the Kuehs which was medium, not too starch-heavy that you feel manageable finishing a few on your own.
While I continued to like the skin of the Soon Kueh, I preferred those from some of the other famous stalls which seemed more packed with strong shrimp flavour.
The Peng Kueh (glutinous rice) was also not bad, with lovely flavours from the mushroom, dried shrimps and soft peanuts, with an appropriately thin skin that was not too sticky. I can tell why this stall enjoys its popularity.
