Jun Yuan House Of Fish located at Old Airport Road Food Centre is one of the new hawker stalls listed on the Michelin Bib Gourmand Singapore 2021.
It is not the only fish soup stall on Singapore’s Bib Gourmand though, joining Kwang Kee Teochew Fish Porridge at Newton (new entrant in 2021) and Beach Road Fish Head Bee Hoon at Whampoa Food Centre.
(If you love sliced fish soup 鱼片汤, other famous stalls in Singapore include First Street Teochew Fish Soup (Upper Serangoon), Han Kee (Amoy Street Food Centre), to the newly opened Qing Feng Yuan (Tiong Bahru Food Centre).)
The stall is not exactly that in-the-radar though, started back in 2014 and run by 2nd generation hawkers. They have another outlet at Pasir Ris Hawker Centre.
The owners took over the stall at the age of 21 from their mother, then offered various Teochew style fish soups included with fresh grouper fish, batang (mackerel) fish and fried fish.
Unlike a usual fish soup style with mostly 3 to 5 choices, you would find a wide-varied menu with several items on the board.
What you get are clear broths dashed with a hint of Chinese wine. Milk is not included, but you can inform them to add should you want to.
The top five highlight are the Herbal Seafood Soup ($5, $6, $7, 10), Chinese Spinach Seafood Soup with Wolfberries ($6, $7, $8), Special Red Grouper Fish Head Soup ($10, $12, $15), Special Sliced Red Grouper Fish Soup ($10, $12, $15), and Sliced Red Group Fish Soup ($10, $12).
The recommended are the Herbal Seafood Soup ($10), included with conspicuous amount of ingredients from sliced batang fish, prawns, minced meatballs, to Chinese herbs such as angelica (dang gui) and polygonatum roots (yu zhu).
While the soup is termed “herbal”, the Chinese wine and herbs did not overpower the rest of the ingredients. You still get the lightness and sweet flavours of the soup, and appreciate the freshness of the slices.
The mackerel fish was fresh-tasting and smooth, with a good bite as they were not sliced too thin.
Other interesting addition was the meatballs made in-house (not the generic factory kind) gave the bowl more character and varied bite, though I wished they were more succulent.
There are also the more ‘normal’ renditions of Sliced Fish Soup ($4, $5, $6), Fried Fish Soup ($4, $5, $6), Double Fish Soup ($5, $6, $7), Minced Meatball Soup ($3.50, $4.50, $5.50) and Seafood Soup ($5, $6, $7).
Before the sliced and fried fish, I would prefer to the former as you can appreciate the freshness better, while the fried fish slices could have been more crispy – and thus more ordinary.
