Tucked in Tanjong Katong Road, Madeleine’s Original Portuguese Egg Tart is hard to miss. The enticing bright yellow stall is the home of one of the most famous egg tarts in Singapore. As there are many renditions of the Portuguese Egg Tarts, Madeleine’s follows the tastes and textures of Macau’s version of it. Flaky and creamy, many locals lined up for these sweet delicacies!
Portuguese Egg Tarts Are Prepared From Scratch
Making the perfect Portuguese Egg Tart is hard work. At Madeleine’s, everything is prepared from scratch. It all starts off with the crust. Unlike the usual egg tarts, the Portuguese Egg Tart is famous for having flaky crusts. Using a mould, the team presses the pastry to fit the mould one by one. When it is completed, an egg mixture is poured in, and it is baked to golden-brown!
The outcome is simply marvelous. The crust has multiple layers (some say it is almost twenty), and the egg component appears to be glass-like, thanks to the caramelised top. A cross-section cut will show that the tart is packed with egg custard. We love it when the ratio of egg custard is more than the crust! There are two sizes available, an original version, and a mini version.
Apart from the original flavour, one can opt to try the pandan flavour. Do take note that there is a limited quantity for pandan, and it is usually sold out before the end of the day.
