Crystal Jade has exclusive hairy crab dishes

The weather in Singapore may not reflect the changing seasons, but what’s on the menus of our favourite restaurants do. Over at the Crystal Jade Group’s various restaurants, autumn is the season for hairy crab, so for a limited time, you can expect a wide variety of hairy crab dishes available at the group’s different concepts.

If you’re not familiar with hairy crab, here’s the lowdown: the ones served at Crystal Jade are all specifically imported from the Yangcheng Lake in China’s Jiangsu Province, where some of the world’s best hairy crabs are harvested. 

Hairy crabs are famously much sweeter than your average mud or snow crab, and are also highly prized for their buttery golden-yellow roe. Crystal Jade has taken these crabs—all of ample size and packed with roe—to craft a selection of limited-edition dishes you can get from 16 October till 15 December only.

Those looking to plan a family dinner or a special occasion meal can make a reservation at Crystal Jade’s fine dining outlets, namely Crystal Jade Palace, Golden Palace and Pavilion. Their elevated hairy crab offerings include Hairy Crab Roe Xiao Long Bao ($16.80++ for two), which sees thin dumpling skin wrapped around plump pieces of hairy crab meat and roe, as well as a sweet seafood broth. Otherwise, savour the crab’s natural flavours with their Seasonal Hairy Crab Steamed With Shiso Leaf or Steamed With 20 Years Aged Chinese Hua Diao Wine. Both the whole crab dishes are charged at seasonal prices. 

Hairy crab dishes are great to pair with baijiu, so if you fancy some drinks to go with your meal, order a bottle of Kweichow Moutai Bulao. Typically priced at $128++ per 125ml bottle, you can now get it for just $98++. Note that this is only available at their fine dining concepts.

Over at Crystal Jade Hong Kong Kitchen, dishes get a hairy crab roe upgrade. For instance, there is the Crab Roe Scallion Oil Pastry ($12.80++ for two), a riff on cong you bing with creamy crab roe. Enjoy the sweet-savoury balance of the Steamed Milk Custard with Crab Roe, Salted Egg Yolk & Conpoy ($32.80++), or order the Braised Homemade Green Tea Beancurd with Crab Roe ($32.80++), starring silky smooth beancurd perfumed by green tea.

For more casual hairy crab fare, visit Crystal Jade La Mian Xiao Long Bao, where you can enjoy Nanxiang Crab Roe Xiao Long Bao ($16.80++ for four) to start off the meal, and follow that up with their fragrant, umami La Mian with Scallion Oil & Crab Roe ($16.80++ per person). Make your meal more complete when you order their Steamed Australian Scallop with Minced Garlic & Golden Mushroom ($28.80++ for three), where sweet rounds of scallop are dressed with an aromatic garlicky sauce.
