An unassuming stall at Bukit Merah, Day Night has actually been featured in several newspapers and has won numerous awards. For most stalls, the noodles are usually fried with pork lard but for Day Night, however, they are simply added on the side as toppings. The kway teow noodles used here as well are also thinner than your typical ones, making them look similar to Pad Thai.

The Char Kway Teow ($3.50) comes with a plate of perfectly cooked noodles, delivering a good blend of sweet and savoury. With the addition of the sweet dark sauce, it leans slightly more on the sweeter side. Additionally, it has a good kick of spice and the noodles don’t clump together despite them not being too oily. The dish however could use a little more wok hei for a contrast of smokiness and for an added oomph to each bite.

As for the ingredients, this dish is served with lup cheong, eggs, fishcakes, and mini cockles, adding delightful layers of flavour and textures. Furthermore, the crispy pork lard gives a beautiful crunch and umami to the noodles! Even though the portion of some of the ingredients isn’t the most generous, there are really no complaints considering the price point.

Served with a wedge of lime, be sure to squeeze it into your noodles for a touch of brightness and acidity to lift the dish. Overall, although Day Night Char Kway Teow has a few hits and misses, they are definitely a worthy stall that’s still worth checking out!
