Chongqing Premium Grilled Fish is a relatively new restaurant, having opened only one and a half years ago! One of the owners, Mr Lee, was sadly retrenched after ten years in the PR industry during the pandemic and became a foodpanda rider to make ends meet. Even after working for over 12 hours per day, he earnings were only around $100.
Despite the hardship, he persevered and soon partnered with his ex-campmate in 2020 to set up their own Chongqing Grilled Fish Restaurant! Fast forward to today, they have certainly come a long way and currently have two outlets – one at Jurong West and the other at Tanjong Katong! Truly amazing to see how far the restaurant has come!

What makes this restaurant unique is that they actually charcoal-grill their fish instead of deep-frying them! Not only that, they offer three types of fish for customers to choose from! Choose from Sea bass, Patin Fish, and Red Snapper! The most popular choice would be the Patin Fish as it has lesser bones and the meat is seriously tender. Chongqing Premium Grilled Fish serves only the freshest fish to ensure every bite is the taste of freshness mixed with the delectable flavours of your soup bases!
Six Amazing Soup Bases To Choose From!
To order, all you have to do are three simple steps – choose your type of fish, followed by your soup base, and then your spice level! Prices range from $28.80 to $46.80, depending on the type of fish and serving size. Just like your typical mala, you have the option of choosing your spice level as well. For those who can’t really handle their spice, there is a non-spicy option. For those spice lovers, challenge yourself and see if you can truly handle the heat!
Let’s have a look at their delectable soup bases:
*Do note the spice level for all of the dishes listed is “Mild Spicy”.
1. Superior Spicy (Red Snapper)

Their signature soup base, the Superior Spicy, has the familiar taste of mala, but without the numbing sensation. This soup base has been specially modified to suit the Singaporean’s taste buds, making it super palatable! The soup base has the perfect balance of saltiness and spiciness which pairs perfectly with the natural sweetness of the snapper! Additionally, the fish is seriously tender with a hint of smokiness shining through with each bite! The perfect alternative to your typical mala soup base!
2. Double Spice (Seabass)

For the double spicy soup base, it is a clear soup that has a touch of the numbing sensation, similar to mala. Fresh green and red chilli are used to give the soup base a good kick of spice with each sip! The flavourful soup blends well with the subtle sweetness of the seabass, giving each bite a burst flavour! For those who prefer a little more heat, feel free to up your spice level, or you can simply pair the chillies with your fish!
3. Signature Mala (Red Snapper)

Up next is the classic soup base and probably everyone’s favourite, the Signature Mala! For those who want an authentic taste of Chongqing grilled fish, this is the soup base for you! Unlike your usual hotpot mala soup base which some people might find too strong to drink, the mala here has a much lighter taste which makes it much more palatable! Each sip gives you an amazing kick of spice and not forgetting, the numbing sensation from the peppercorns! Be sure to up the spice level if you want more heat to your dish!
4. Golden Sour Spicy (Patin Fish)

One of the must-try soup bases is definitely the Golden Sour Spicy flavour! Made with the chef’s own secret recipe, each sip brings you flavour profiles of sourness, spiciness, and savouriness, with strong hints of black bean that hits your taste buds almost immediately! Out of all six soup bases, this definitely has the most heat to it, making it the top choice for spice lovers! Be sure to soak the fried beancurd skin into the soup base for that beautiful burst of flavour as you bite into it! Definitely a dish you can’t miss out on!
5. Sauerkraut (Patin Fish)

For something lighter on the palate, the sauerkraut soup base would be a good option! Fresh sauerkraut is used, giving the dish a super refreshing taste! Flavourwise, the soup base has a good mix of sourness and spiciness! The patin fish is seriously fresh and tender, pairing perfectly with the sauerkraut that adds another layer of tanginess and texture to each bite! Additionally, the dish also comes with pork belly and mushroom to make it a pretty substantial dish!
6. Mushroom Herbs (Patin Fish)

Not only that, the dish also comes with an array of your steamboat favourites! Items like fish roe dumplings, pork balls, prawn paste balls, and everyone’s favourite, cheese tofu, can be found, making it feel like you’re having a steamboat with your friends and family!
